Kumquat Pecan Bread

Ingredients
2/3 cup
Milk
2
Eggs (beaten)
2 tablespoons
Oil
2 cups
Flour
3/4 cup
Sugar
1 1/2 teaspoons
Baking powder
1 teaspoon
Salt
3/4 cup
Kumquats (finely chopped or pureed)
3/4 cup
Chopped pecans
Step by Step Instructions
- Preheat oven to 350 and lightly grease an 8 by 5-inch loaf pan. If pureeing the kumquats, cut them in half, remove the seeds, then blend them in a food processor.
- Mix the milk, oil, and beaten eggs together in a mixing bowl.
- Mix the flour, sugar, baking powder, salt, and baking soda together in a separate bowl. Add the milk mixture to the dry mixture and stir until well combined.
- Gently stir the kumquats and chopped pecans into the batter.
- Pour the batter into the prepared loaf pan, then bake for 50 to 60 minutes. Let cool, then remove from the pan.
